Thanksgiving 2021, nope, not this year

So here we are AGAIN,  attempting to have Thanksgiving in the “woods”. Which really means in the camper in an overpopulated Campground,  that makes me REALLY want to step back and buy our own land.

Don’t get me wrong, I LOVE CAMPING.  I love camping in the RV even more so than in a tent.  I do actually enjoy some privacy though, which is actually getting harder to find in campgrounds. And lately,  I just really have a itch to buy our own property for some real privacy.

At the same time, I enjoy going to new campgrounds. I like to see the sites, and the campers. And the patrons. There is something about other people that make life interesting.  I imagine,  that if all the people I work with were awesome, and perfect in every way,  always did their job and never created drama, I would be banging my head against the wall.

Anyway, a post for another day perhaps. But it does lead me to my next Thanksgiving note. The mother in law will be there again this year. After the unknown candid shots of me she posted up and down Facebook last year, I know to be prepared this year, and maybe put some makeup on or brush my hair before starting breakfast 😳.  I don’t seem to photograph as well as I use too so that doesn’t help.   We also have friends joining us this year.  We have camped with them before, so I think we are good as far as no drama goes.

Last year we did traditional southern Thanksgiving foods. Pumpkin pie, turkey and giblet gravy etc. I’m thinking this year, we will do less traditional,  and easier. Instead of fried Turkey that’s enough to feed a crowd. The plan is to smoke a turkey breast or something the day before.   There was way too much food for 3 people last year, and I spent all day the day before departure cooking and prepping, and most of Thanksgiving Day cooking. Which isn’t unusual,  it’s just that the whole point of this was to simplify.  As I’ve said before, the more I try to simplify the more complicated it gets. We got a new pellet smoker, and have tried one turkey on it. The pellet smoker is a new thing for me, because I always used an offset smoker. The pellet smoker makes life ALOT easier. I didn’t think I would like it. I didn’t think it would be as authentic, but I was wrong. It was perfect, and easy and juicy.

I really wish I had more thyme to write these blogs, and the recipes,  but I just don’t. I’m sure with a little effort..it would be better, but so far no good.

Nope…not this year!

As you can tell from the above, we were supposed to go camping for 5 days. Had friends coming along and all, but it just didn’t work out this year. Fortunately we were able to cancel the trip without much penalty since it was at a state park. It started by canceling one day because of work. But our dog was sick. Very sick. And has been sick for a couple of weeks, and has been back and forth to the vet in the prior weeks. We were referred to the emergency vet across town because they are specialists.  Blue Pearl Emergency 💙 in Sandy Springs.

As the trip came closer, it was clear that there was going to be some real issues. The referral and estimated specialists vet visit were going to be costly, and the potential work conflicts together made the trip seem like not such a good idea. I just didn’t want to be that far away from his vet, and didn’t want Jimmy driving 4 hours to come work on Thursday or Friday.

After all was said and done, the puppy spent Wednesday night at the vet, and was able to come home Thanksgiving day, in much better shape. We aren’t totally in the clear, because he could still potentially have some sort of cancer, but we are hopeful it’s just a severe pancreatitis. He’s doing much better, and we have a huge thanks (on Thanksgiving) to give to our regular vet and the specialist at Blue Pearl.

I did manage take an lattice apple pie, but really, I didn’t get a lot of pictures. Most of the time,, my mind was on the doggy.

Maybe next year we can try Camp Thanksgiving again. This year, we cooked a full Thanksgiving Dinner with pie, dressing, turkey and essentially the works, for 3 people. We werent really sure if we might have a couple of extras, so I didn’t dial back the portions to much. I really need to cut it back, because I’m still trying to give away food. We were able to get some work on the shed done (not completed) so we did our best to make the most of the time we had, even though Jimmy had to work for a few hours nearly everyday.

AND I was trying to make reservations for next memorial weekend, and of course, I was so caught up with cooking, and the puppy, that I missed the opening on the 26th, and we weren’t able to get a single site at the campground we wanted. We did luck up and find some sites for Memorial weekend 2022, at one of the campgrounds we used to visit alot. Lake Allatoona is good, not my favorite, but we managed to get 6 sites in a grouping and considering what we usually end up hauling, its closer to home and just makes it easier. Hopefully everyone will make it, and if not, we will have some sites to let go of and give some last minute folks a chance to get a Memorial weekend site.

Either way, I’m very Thankful we stayed home, and we got our money back for the trip, and my puppy dog is doing much better ❤
